Many believe this dates back to around the turn of the 1890s by Jennings Cox, an engineer, which is backed up by recorded recipes from the time. Cox worked in the Daiquiri mine. He insisted on a rum ration, to entertain guests he came up with the cocktail and the cocktail was named after the mine.  However due to its simple nature it is still likely that it dates back further just under different names.
